Simple Nectarine Desert

I had some nectarines that were a little past best and happened to have bought some ratafia biscuits, so decided to try this. I’m sure that someone else must have done this or something like it but I can’t remember where, so here goes:-
Ingredients
Nectarines
A few ratafia biscuits per nectarine
Demerera Sugar
Method
- Stone the nectarines into halves
- Wrap the ratafia biscuits in a tea towel and smash with a tea towel (but keep some texture).
- Fill the hole where the nectarine stone was with the ratafia biscuits (and a little more)
- Cover the nectarine half with demerara sugar. Don’t be stingy.
- Put the nectarines under a grill to create a brulee on top (it also slightly warms the nectarine).
- Allow to cool a little then serve with thick cream or good ice cream.
The ratafia biscuits, despite having something of an almond taste are made from apricot kernels, so complement the nectarine well.
