I watched the show, and I’m not sure how much she “cut corners”. Cutting corners means doing something that produces a lesser result. Frozen mashed potatoes are simply potatoes cooked, mashed and frozen. They’re much less of a compromise than, for instance, using shop bought mayonnaise which is inferior to home made mayonnaise.

The reason for not using frozen mash is money. It costs more than making your own. But then you have to decide how valuable your time is.
